Just 8 Corn Muffins
Eight little corn muffins. Two apiece for breakfast leaves four little muffins to stuff a Sunday chicken. Use a nice, coarse whole yellow corn meal.

1 cup corn meal and flour (about half and half) |
Pre-heat the oven to 425 degrees. Use the butter to grease the muffin tins and melt the rest. Sift the dry ingredients together into bowl. Form a well. Beat the milk and egg in the well, and then stir into the dry mix. Stir in the melted butter and bake the muffins 12-15 minutes, until springy on top. Don't overcook.
